Ingredients: Chicken, Canned Bamboo shoots, Green chilli, and Dry red chilli flakes, Tomatoes, Ginger, Garlic, Onions, Spring onions, Salt.
Procedure: Curate clean chicken with some salt and keep aside. Next cut the onions into thin slices and crush the ginger and garlic. In a non stick deep frying pan, pour oil as required. When hot, add slit green chillies, chilli flakes and the crushed ginger and garlic. Stir for few seconds and then add the onions. Sauté it till transparent. Then add the tomatoes, spring onions. Cut bamboo shoot in quarters lengthways, add them in the frying pan, stir it well for 2 minutes, and then add the Chicken. Add a little water if gravy is required. Cook well until chicken is tender. Garnish with red chilli slices and coriander. Serve hot with steamed rice.
